Additional information
about teas and tisanes:

Black tea is roll broken after withering, and there is no steaming as the enzymes need to remain active. (Withering is moisture evaporating from the leaf.) Roll breaking cracks the surface of the leaf exposing the leaf's enzymes to oxygen initiating oxidation. Oxidation is the process that results in the flavor profiles of Oolong & Black tea. After FULL oxidation occurs, the leaf is then finished with forced hot air.

Green tea
is picked and then steamed to neutralize active enzymes. After steaming, the leaf is withered then manipulated to achieve the desired leaf finish, then steamed again or pan fired.

TISANES (Herbal Infusions) are not TEA (Camellia sinensis). Tisanes are herbal "teas" that do not contain tea. Tisanes contain HERBS, SPICES, FRUIT or FLOWERS to create their flavor profiles. Most Tisanes are CAFFEINE FREE.

BLACK TEAS

Earl Grey is a blend of fine China Black tea and Bergamot, a Mediterranean citrus fruit indigenous of Sicily & its environs.


Irish Breakfast - $5.95 / ¼ lb
Assam, a Black tea grown in North Eastern India, is the original name of traditional Irish Breakfast tea. It is robust, hearty & malty.


English Breakfast - $5.95 / ¼ lb
Traditional English Breakfast tea is made essentially from Keemun, a Black tea grown in the Anhui province of China. This marvelous tea is renowned for its orchid bouquet & splendid red color.


Decaf English Breakfast - $9.95 / ¼ lb
This decaf Keemun Black tea is made using the CO2 process that delivers a natural, de-caffeinated tea in the purest way possible. By varying the extraction/separation pressures & temperatures, CO2 makes it possible to selectively extract only the caffeine, leaving the flavor intact. As a solvent, carbon dioxide is non-toxic, odorless, tasteless, germicidal, food-safe & non-combustible & the process does not cause environmental harm.


Orange Pekoe - $5.95 / ¼ lb
Orange Pekoe tea has nothing to do with the color orange or the flavor of the citrus fruit. The original term, derived from a reference to the princes of Orange, was most likely used by Dutch traders to indicate fancy tea. Today, Orange Pekoe refers to the larger of the leaves on a fine plucking, and the term indicates a generally good-quality tea.
